1 cup fresh raspberries (plus extra for garnish)

1 cup heavy cream

8 oz mascarpone cheese

1/2 cup powdered sugar

1 teaspoon vanilla extract

1 cup strong brewed coffee, cooled

1 tablespoon almond extract

12-15 ladyfinger biscuits

Unsweetened cocoa powder for dusting

Fresh mint leaves for garnish (optional)

Instructions
 

In a medium bowl, combine the mascarpone cheese, powdered sugar, and vanilla extract. Whisk until smooth and creamy.

    In a separate bowl, whip the heavy cream until stiff peaks form. Carefully fold the whipped cream into the mascarpone mixture until fully combined.

      In another bowl, mix the cooled coffee with almond extract. Dip each ladyfinger biscuit in the coffee mixture for about 1-2 seconds to soak without becoming soggy.

        Begin layering: In a rectangular dish, place a layer of soaked ladyfingers at the bottom. Spread half of the mascarpone mixture over the ladyfingers, then layer half of the fresh raspberries on top.

          Repeat the process with another layer of soaked ladyfingers, the remaining mascarpone mixture, and then the remaining raspberries.

            Cover the dish with plastic wrap and refrigerate for at least 4 hours, preferably overnight, to allow the flavors to blend and the dessert to set.

              Before serving, dust the top with unsweetened cocoa powder and garnish with additional raspberries and mint leaves if desired.
