4 boneless, skinless chicken thighs

1 tablespoon vegetable oil

ΒΌ cup soy sauce (low sodium)

2 tablespoons honey

1 tablespoon rice vinegar

1 tablespoon sesame oil

1 tablespoon fresh ginger, minced

2 garlic cloves, minced

1 teaspoon cornstarch

2 tablespoons water

1 green onion, finely sliced (for garnish)

1 tablespoon sesame seeds (for garnish)

Cooked jasmine rice (to serve)

Instructions
 

Prep the Chicken: Rinse the chicken thighs under cold water and pat dry. Cut them into bite-sized pieces.

    Cook the Chicken: In a large skillet or wok, heat the vegetable oil over medium-high heat. Add the chicken pieces and cook for about 5-7 minutes, stirring frequently, until they are browned and cooked through. Remove from the skillet and set aside.

      Make the Teriyaki Sauce: In the same skillet, reduce the heat to medium. Add the soy sauce, honey, rice vinegar, sesame oil, minced ginger, and minced garlic. Stir to combine and bring to a gentle simmer.

        Thicken the Sauce: In a small bowl, mix together the cornstarch and water to make a slurry. Slowly pour this mixture into the simmering sauce while stirring constantly. Continue to cook for another 2-3 minutes, or until the sauce has thickened to your desired consistency.

          Combine Chicken and Sauce: Return the cooked chicken to the skillet, stirring it into the sauce until evenly coated. Allow it to heat together for about 2 minutes.

            Serve: Spoon the teriyaki chicken over a bed of cooked jasmine rice. Garnish with sliced green onions and a sprinkle of sesame seeds for a delightful finish.
