300g spaghetti or your favorite pasta

½ cup shelled pistachios

1 cup fresh basil leaves

2 cloves garlic, peeled

½ cup grated Parmesan cheese

½ cup extra virgin olive oil

Juice of 1 lemon

Salt and pepper to taste

Cook the Pasta: Bring a large pot of salted water to a boil. Add the spaghetti and cook according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the spaghetti and set aside.

    Make the Pistachio Pesto: In a food processor, combine the shelled pistachios, fresh basil leaves, garlic, Parmesan cheese, lemon juice, salt, and pepper. Pulse until coarsely chopped.

      Add Olive Oil: With the food processor running, slowly drizzle in the extra virgin olive oil until the pesto reaches a smooth, creamy consistency. If it's too thick, add a splash of the reserved pasta water to loosen it.
