1 ½ cups graham cracker crumbs

½ cup unsalted butter, melted

2 cups cream cheese, softened

1 cup powdered sugar

1 teaspoon vanilla extract

2 cups heavy whipping cream

1 ½ cups fresh strawberries, pureed (plus extra for topping)

2 tablespoons gelatin powder

3 tablespoons warm water

In a mixing bowl, combine the graham cracker crumbs and melted butter. Mix until the crumbs are evenly coated.

    Press the crumb mixture into the bottom of a 9-inch springform pan to form a crust. Use the back of a measuring cup to compact it. Refrigerate the crust for 30 minutes to set.

      In another large bowl, beat the softened cream cheese with an electric mixer until smooth and creamy. Gradually add the powdered sugar and mix until well combined.

        Stir in the vanilla extract and a pinch of salt to the cream cheese mixture.

          In a separate bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture until well incorporated.

            In a small bowl, dissolve the gelatin powder in warm water and let it sit for a few minutes until it thickens.

              Stir the pureed strawberries into the cream cheese mixture, and then fold in the dissolved gelatin until evenly combined.

                Pour the strawberry cheesecake filling onto the prepared crust in the springform pan. Smooth the top with a spatula.

                  Refrigerate the cheesecake for at least 4 hours or until set.

                    Once set, carefully remove the sides of the springform pan. Top with fresh strawberry slices before serving.
