1 cup ricotta cheese

2 large eggs

1/3 cup granulated sugar

Zest of 1 lemon

1/4 cup fresh lemon juice

1 teaspoon vanilla extract

1 cup all-purpose flour

1 tablespoon baking powder

1/4 teaspoon salt

1/2 cup milk (or more if needed)

Butter or oil for cooking

Maple syrup and fresh berries for serving

Instructions
 

In a large mixing bowl, whisk together the ricotta, eggs, sugar, lemon zest, lemon juice, and vanilla extract until fully combined and creamy.

    In a separate bowl, mix the flour, baking powder, and salt together until well blended.

      Gradually add the dry ingredients to the ricotta mixture, stirring gently to combine. Add the milk and mix until the batter reaches your desired consistency (it should be thick but pourable).

        Preheat a non-stick skillet or griddle over medium heat and add a little butter or oil.

          Pour about 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface, about 2-3 minutes, then flip and cook for another 2-3 minutes until golden brown.

            Repeat with the remaining batter, adding more butter or oil as needed between batches.

              Serve the pancakes warm topped with a drizzle of maple syrup and fresh berries.
