Ingredients
  

1 pound boneless, skinless chicken breasts, cut into 1-inch pieces

3 tablespoons honey

3 tablespoons sriracha sauce

1 tablespoon soy sauce

1 tablespoon sesame oil

2 cloves garlic, minced

1 tablespoon fresh ginger, minced

Salt and pepper to taste

1 red bell pepper, cut into 1-inch pieces

1 green bell pepper, cut into 1-inch pieces

1 small red onion, cut into quarters

Cooked rice or quinoa, for serving (optional)

Fresh cilantro, chopped, for garnish

Instructions
 

In a medium bowl, whisk together honey, sriracha, soy sauce, sesame oil, minced garlic, and minced ginger until well combined.

    Add the chicken pieces to the marinade and stir to coat evenly. Cover and refrigerate for at least 30 minutes, or up to 2 hours for more flavor.

      While the chicken marinates, soak wooden skewers in water for at least 30 minutes to prevent burning.

        Preheat your grill or grill pan over medium-high heat.

          Thread marinated chicken, red bell pepper, green bell pepper, and red onion onto the skewers, alternating between chicken and vegetables.

            Season the skewers with salt and pepper.

              Grill the skewers for about 10-12 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks. The internal temperature should reach 165°F (75°C).

                Remove the skewers from the grill and let them rest for a couple of minutes before serving.

                  Serve the skewers over cooked rice or quinoa, garnished with fresh cilantro and an extra drizzle of honey if desired.
