1 cup water

1/2 cup unsalted butter

1 tablespoon granulated sugar

1/4 teaspoon salt

1 cup all-purpose flour

3 large eggs

1 teaspoon vanilla extract

1 teaspoon ground cinnamon

1/2 cup granulated sugar (for coating)

Vegetable oil for frying

Instructions
 

In a medium saucepan, combine water, butter, 1 tablespoon of sugar, and salt. Heat over medium until the butter is melted and the mixture comes to a gentle boil.

    Once boiling, remove from heat and immediately stir in the flour until a dough forms. Return to low heat and stir for 1-2 minutes until the dough pulls away from the sides of the pan.

      Transfer the dough to a mixing bowl and let cool for about 5 minutes.

        Add the eggs one at a time, mixing well after each addition. The dough will become smooth and glossy. Stir in vanilla extract.

          Prepare a piping bag fitted with a large star tip, and fill it with the churro dough.

            In a large pot or deep pan, heat about 2 inches of vegetable oil over medium-high heat until it's hot (around 350°F/175°C).

              Carefully pipe 4 to 6-inch strips of dough directly into the hot oil, cutting off the dough with scissors. Fry in batches to avoid crowding, cooking until golden brown (about 2-3 minutes per side).

                Remove churros with a slotted spoon and drain on paper towels.

                  In a shallow bowl, mix 1/2 cup of sugar with cinnamon. Roll the warm churros in the mixture until fully coated.
