2 boneless, skinless chicken breasts

1 tablespoon olive oil

1 teaspoon smoked paprika

1 teaspoon garlic powder

Salt and black pepper to taste

4 cups romaine lettuce, chopped

1 cup cherry tomatoes, halved

1/2 cup croutons (preferably homemade)

1/4 cup grated Parmesan cheese

1/4 cup Greek yogurt

2 tablespoons lemon juice

1 tablespoon Dijon mustard

1 clove garlic, minced

Fresh basil leaves, for garnish

Marinate the Chicken: In a small bowl, mix olive oil, smoked paprika, garlic powder, salt, and pepper. Coat the chicken breasts with the marinade and let them sit for at least 30 minutes to absorb the flavors.

    Prep the Grill: Preheat your grill to medium-high heat. Lightly oil the grill grates to prevent sticking.

      Grill the Chicken: Place the marinated chicken breasts on the grill and cook for 6-7 minutes on each side, or until fully cooked (internal temperature should reach 165°F). Remove from heat and let rest for 5 minutes before slicing.

        Make the Dressing: In a small bowl, whisk together Greek yogurt, lemon juice, Dijon mustard, minced garlic, salt, and pepper until smooth. Adjust seasoning to taste.
