4 medium zucchini, thinly sliced

1 medium onion, finely chopped

2 cloves garlic, minced

1 cup low-fat cottage cheese

1 cup grated Parmesan cheese (divided)

2 large eggs

1/2 cup fresh basil, chopped

1 teaspoon dried thyme

Salt and pepper to taste

1/2 cup breadcrumbs (optional, for topping)

Olive oil for greasing and sautéing

Instructions
 

Preheat your oven to 375°F (190°C) and grease a baking dish with a little olive oil.

    In a large skillet, heat a tablespoon of olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.

      Stir in the minced garlic and cook for another minute until fragrant, taking care not to burn it. Remove from heat.

        In a mixing bowl, combine the cottage cheese, half of the grated Parmesan (1/2 cup), eggs, chopped basil, thyme, salt, and pepper. Mix until smooth and well blended.

          Layer half of the sliced zucchini in the greased baking dish, then pour half of the cottage cheese mixture over the zucchini.

            Add the sautéed onion and garlic mixture on top of the first layer. Repeat this process with the remaining zucchini and cheese mixture, finishing with the last layer of zucchini.

              If using, sprinkle breadcrumbs on top and then evenly distribute the remaining Parmesan cheese over everything.

                Cover the baking dish with aluminum foil and bake for 25 minutes, then remove the foil and bake for another 15-20 minutes, or until the top is golden brown and the zucchini is tender.

                  Allow to cool slightly before slicing and serving.
