Ingredients

2 cups fresh spinach, chopped

1 cup feta cheese, crumbled

1 cup all-purpose flour

1 cup milk

2 large eggs

1 tablespoon baking powder

1 teaspoon salt

1 teaspoon black pepper

2 tablespoons olive oil

1/2 teaspoon garlic powder

1/4 teaspoon nutmeg (optional)

Instructions

Preheat your waffle maker according to the manufacturer's instructions.

In a mixing bowl, combine the chopped spinach and crumbled feta. Set aside.

In another bowl, whisk together the flour, baking powder, salt, black pepper, garlic powder, and nutmeg until well mixed.

In a separate bowl, whisk the eggs, then add the milk and olive oil, mixing until combined.

Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix; a few lumps are okay.

Gently fold in the spinach and feta mixture until evenly distributed throughout the batter.

Lightly grease the waffle maker with a little olive oil or cooking spray, then pour an appropriate amount of batter onto the hot waffle iron (follow waffle maker's specific serving size).

Close the waffle maker and cook until the waffles are golden and crisp (about 4-6 minutes, depending on your machine).

Remove the waffles carefully and place them on a serving plate. Keep warm in a low oven if necessary.

Repeat the process until all batter is used.
