200g all-purpose flour

150g granulated sugar

100g unsalted butter, softened

3 large eggs

1 teaspoon baking powder

1/2 teaspoon baking soda

Zest of 2 lemons

60ml fresh lemon juice

100g poppy seeds

1/2 teaspoon salt

Powdered sugar, for dusting (optional)

Preheat your oven to 180°C (350°F). Grease and flour a 9-inch round cake pan, or line it with parchment paper.

    In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.

      Add the eggs, one at a time, mixing well after each addition.

        Stir in the lemon zest and lemon juice until well combined.

          In a separate bowl, whisk together the flour, baking powder, baking soda, salt, and poppy seeds.

            Gradually add the dry ingredients into the wet mixture, mixing until just combined. Be careful not to overmix; the batter should be smooth.

              Pour the batter into the prepared cake pan and smooth the top with a spatula.

                Bake in the preheated oven for 30-35 minutes, or until a toothpick inserted in the center comes out clean.

                  Once baked, remove the cake from the oven and allow it to cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.

                    Once cooled, dust the top with powdered sugar for a decorative finish if desired.
