4 ears of fresh corn, husked

1/2 cup mayonnaise

1 cup crumbled Cotija cheese

1 teaspoon chili powder

1 teaspoon smoked paprika

2 tablespoons lime juice

1/4 cup fresh cilantro, chopped

Salt to taste

Lime wedges for serving

Prepare the Corn: Start by bringing a large pot of salted water to a boil. Add the husked corn and cook for 5-7 minutes until tender but still crisp. Remove from water and let cool slightly.

    Make the Sauce: In a mixing bowl, combine the mayonnaise, lime juice, chili powder, smoked paprika, and a pinch of salt. Mix well until the sauce is smooth and season to taste.

      Coat the Corn: Once the corn has cooled, use a brush or your hands to generously coat each ear of corn with the sauce, making sure to cover all sides.

        Add Cheese and Cilantro: Roll the coated corn in the crumbled Cotija cheese, pressing gently so it adheres. Sprinkle additional chili powder on top if desired for extra heat. Then, top with the chopped cilantro.
