1 can (15 oz) chickpeas, rinsed and drained

1 medium onion, finely chopped

2 garlic cloves, minced

1 inch ginger, grated

1 can (14 oz) coconut milk

3 tablespoons curry powder

1 teaspoon turmeric powder

1 teaspoon ground cumin

1 tablespoon olive oil

1 cup diced tomatoes (fresh or canned)

Salt and pepper to taste

Fresh cilantro, chopped (for garnish)

Lime wedges (for serving)

Instructions
 

Heat the olive oil in a large skillet over medium heat.

    Add the chopped onion and sauté for about 3-4 minutes, or until translucent.

      Stir in the minced garlic and grated ginger, cooking for an additional minute until fragrant.

        Sprinkle in the curry powder, turmeric, and cumin, stirring continuously for about 1 minute to toast the spices.

          Add the diced tomatoes to the skillet and cook for another 2-3 minutes, allowing them to soften.

            Pour in the coconut milk and bring the mixture to a simmer.

              Once simmering, add the drained chickpeas and stir well to combine.

                Let the curry simmer for about 10-15 minutes, stirring occasionally. Season with salt and pepper to taste.
