2 large fillets of white fish (cod or tilapia)

1 cup buttermilk

1 cup all-purpose flour

1/2 cup cornstarch

1 teaspoon paprika

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

1/2 teaspoon cayenne pepper (optional for spice)

Salt and pepper to taste

Oil for frying (vegetable or canola)

4 fresh burger buns, split

1 cup shredded lettuce

1 large tomato, sliced

1/2 cup tartar sauce (store-bought or homemade)

Lemon wedges for serving

Instructions
 

Marinate the Fish: In a shallow dish, combine the buttermilk with a pinch of salt and pepper. Add the fish fillets, ensuring they are well-coated. Cover and refrigerate for at least 30 minutes to tenderize and impart flavor.

    Prepare the Coating: In a separate bowl, mix together the flour, cornstarch, paprika, garlic powder, onion powder, cayenne pepper, salt, and pepper. This will be the crispy coating for the fish.

      Heat the Oil: In a large skillet, pour enough oil to cover the bottom about 1/2 inch deep. Heat the oil over medium-high heat until it shimmers (approximately 350°F or 175°C).

        Coat the Fish: Remove the fish from the buttermilk, allowing excess liquid to drip off. Dredge each fillet in the flour mixture, pressing lightly to ensure a good coating. Shake off any excess.

          Fry the Fish: Carefully place the coated fish fillets into the hot oil. Fry for 4-5 minutes on each side, or until golden brown and cooked through. Use a slotted spatula to remove the fish and place it on a paper towel-lined plate to drain any excess oil.

            Assemble the Sandwich: Toast the burger buns lightly. Spread a generous layer of tartar sauce on the bottom of each bun. Layer with shredded lettuce, followed by the fried fish fillets, and top with sliced tomatoes. Finish with the top bun.
