1 cup all-purpose flour

2 large eggs

1 ½ cups milk (whole or almond)

2 tablespoons unsweetened matcha powder

2 tablespoons melted butter (plus extra for cooking)

2 tablespoons sugar (adjust to taste)

A pinch of salt

Whipped cream (for serving)

Fresh berries (strawberries, blueberries, or raspberries for garnish)

Instructions
 

In a large mixing bowl, sift together the all-purpose flour, matcha powder, sugar, and salt to combine.

    In another bowl, whisk the eggs and then add the milk and melted butter, mixing well until smooth.

      Gradually pour the wet mixture into the dry ingredients while whisking continuously to avoid lumps. Blend until you have a smooth batter. Let the batter rest for 30 minutes at room temperature for smoother crêpes.

        Heat a non-stick skillet or crêpe pan over medium heat and lightly grease it with a bit of butter.

          Pour about ¼ cup of the batter onto the center of the pan and quickly swirl it around to evenly coat the surface.

            Cook for about 2 minutes until the edges start to lift and the bottom is lightly golden. Flip the crêpe using a spatula and cook for another minute on the other side.

              Transfer the cooked crêpe to a plate and repeat with the remaining batter, adding more butter to the pan as needed. Keep the crêpes warm by covering them lightly with a kitchen towel.

                To serve, fold the crêpes into quarters, place them on a plate, and top with a dollop of whipped cream and fresh berries. Drizzle a little honey if desired for added sweetness.
