1 cup peanut butter (creamy or chunky, your choice)

1 cup brown sugar, packed

1 large egg

1 teaspoon vanilla extract

½ teaspoon baking soda

¼ teaspoon salt

½ cup chocolate chips (optional)

¼ cup chopped roasted peanuts (optional, for added crunch)

Instructions
 

Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

    In a large mixing bowl, combine the peanut butter and brown sugar until smooth and creamy.

      Beat in the egg and vanilla extract, mixing until well incorporated.

        Sprinkle in the baking soda and salt, and mix until fully combined.

          If using, fold in the chocolate chips and chopped roasted peanuts for extra flavor and texture.

            Using a tablespoon or cookie scoop, drop rounded balls of dough onto the prepared baking sheet, spacing them about 2 inches apart.
