500g all-purpose flour

75g granulated sugar

10g salt

25g fresh yeast or 7g active dry yeast

5 large eggs, room temperature

200g unsalted butter, softened and cubed

50ml whole milk, lukewarm

1 teaspoon vanilla extract

Egg wash (1 egg beaten with a tablespoon of water)

Instructions
 

In a small bowl, activate the yeast: mix it with the lukewarm milk and a teaspoon of sugar. Let it sit for about 5-10 minutes until frothy.

    In a large mixing bowl, combine the flour, sugar, and salt, mixing well. Make a well in the center and add the activated yeast mixture and the eggs.

      Using a wooden spoon or a dough hook on a stand mixer, mix until a rough dough forms. Be mindful to not overstir; just combine the ingredients.

        Slowly incorporate the softened butter pieces, one cube at a time. Continue mixing until the butter is completely absorbed and the dough is smooth and elastic. This will take about 10-15 minutes by hand, or 5-7 minutes in a mixer.

          Once the dough is kneaded, cover the bowl with a clean kitchen towel and let it rest in a warm area for 1 to 1.5 hours, or until it doubles in size.

            After rising, punch down the dough to remove excess air. Turn it out onto a lightly floured surface and shape it into a ball.

              Divide the dough into three equal parts for a braided effect or into smaller pieces for individual rolls. Shape each piece as desired (braid, rolls, etc.) and place them in greased baking pans.

                Cover the shaped loaves with a towel and let them rise again for about 45 minutes. Meanwhile, preheat your oven to 180°C (350°F).

                  Before baking, brush the tops with the egg wash for a beautiful golden finish.

                    Bake in the preheated oven for 25-30 minutes or until the tops are golden brown and the brioche sounds hollow when tapped.

                      Remove from the oven and let cool in the pans for a few minutes before transferring to a wire rack to cool completely.
